DELUXE VEGAN NACHOS

What’s better than deluxe nachos?  Deluxe VEGAN nachos!

 I picked up some great vegan products from Trader Joe’s and Kroger’s last weekend to make these smashing nachos.  We literally licked the platter clean.

Trader Joe’s Beef-less Ground Beef crumbles, Green Dragon Hot Sauce, and Mozzarella Vegan Shreds are awesome buys. We love Trader Joe’s!

We added a package of Kroger brand (37 cents) taco seasoning to the crumbles as they were cooking.  These beef-less crumbles are tasty, low in fat, no cholesterol, and a good source of protein.

Trader Joe’s Vegan Mozzarella Style Shreds are top notch.  They melt perfectly in the oven.  Microwaving is not recommended.  They’re gooey, cheesy, and they even brown when baked.  I would definitely rank this product high on the list of vegan cheeses.

We also picked up some Daiya Cheddar shreds for variety.

Trader Joe’s Green Dragon Hot Sauce is hot, but not too hot.  We poured this delicious sauce over the top of our nachos after baking them.  Great flavor and something a little different than traditional red sauces.

We added home baked Tortilla Land chips.  These chips make the difference from a great dish to an “over the top” excellent dish.  The chips are super easy to prepare, season, and bake.  You can flavor them any way you want.  We mostly just use a dash of garlic salt and pepper, so we don’t take away from the multiple contrasts of the dish.

The corn and beans are simple.  Open cans and set aside.

We dumped the beans into the Ninja and added taco seasoning, a dash of parsely and crushed them.

We topped the baked nachos with Tofutti Sour Cream.  I am not a huge fan, but I didn’t have the ingredients for my homemade sour cream.  I added a few dashes of onion powder, garlic salt, dried chives, and cracked black pepper.  It worked!

Once all the individual foods were prepared, we took a small baking dish and started layering, adding onions, tomatoes, lettuce, Kroger’s Sweet Hot Jalapenos, and a fresh diced avocado.

DELUXE VEGAN NACHOS

1 12oz Pkg Trader Joe’s Beef-less Ground Beef

2 Pkgs Kroger Taco Seasoning

1 19.6 oz. Pkg Tortilla Land Fresh Uncooked Tortillas

1 8 oz. Pkg Trader Joe’s Vegan Mozzarella Style Shreds

4 oz. Daiya Cheddar Shreds

1 15.25 oz. can Kroger Black Beans

1 15 oz. can Kroger Corn

1 Avocado diced

1 Large onion diced

1 Large tomato diced

½ Head of lettuce shredded

1 Jar Kroger Sweet Hots Jalapenos

1 Jar Trader Joe’s Green Dragon Hot Sauce

 

Preheat oven to 400 degrees F.  Cook the Trader Joe crumbles in a frying pan over medium heat until warm.  Add 1 pkg of Kroger taco seasoning and water according to package directions.  Turn on low, cooking until incorporated, about 10 minutes, stirring often.

Open Kroger beans and corn.  Drain and rinse corn.  Set aside. Pour beans (do not rinse) into Ninja or other food processor.  Add a ½ package of Kroger taco seasoning.  Crush until smooth.

Dice onion, tomato, lettuce, and avocado.

Use a baking dish.  Use any size you want. It depends on how thick or spread out you want them.

Start by layering beans and crumbles. Add layers of cheeses, corn, tomatoes, onions, jalapenos and the chips. Do it your way.  Bake for about 15-20 minutes until cheese is melted.  Keep an eye on it.  We layered the chips, but you could certainly leave them out.  You decide.  As soon as it’s out of the oven, add lettuce, sour cream, diced avocado and hot sauce.  Serve immediately!  You won’t be able to stop eating this.  Enjoy Bitches!

 

 

Home Baked Tortilla Chips

 

Slice the tortillas into bite sized pieces, like you would cut a pizza.  Spray vegetable oil on baking sheet. Place uncooked chips on sheet.  Add seasoning.  We add just a bit of garlic salt and pepper.  Bake at 400 degrees F for about 10 minutes.  Keep an eye on them.  They are finicky.  So worth the trouble.
