We are going to dice all these ingredients up, throw them into a pan, and let it cook for a few hours, stirring occasionally.  It can’t get much easier than that.  Change it up a bit!  Variations are endless.


1 ½ c Peppers diced

1 pkg Boca Crumbles

1 Onion diced

2 T Dried Chives

5 Cloves Garlic

1 Can Vegetable Broth

1 Can Black Beans

1 Can Chick Peas drained and rinsed

1 28 oz. Can Diced Tomatoes

1 28 oz. Can Tomato Puree

1 t Turmeric

2 T Chili Powder

1 T Garlic Salt

1 t Cayenne Pepper

1 t Paprika

1 T Cumin

Added Salt and Black Pepper to taste


Throw all ingredients in a large pot.  Cook on low/medium for a few hours covered, stirring occasionally. We used a mixture of jalapenos, green, banana, and habanero peppers.  Use what you like.  Any meat alternative crumbles will work.   We had the Boca on hand.  While the chili is cooking, do the following.


1 Butternut Squash peeled and diced

1 Avocado diced

1 Dozen Cherry Tomatoes halved

Layer the squash on a baking pan lightly sprayed with oil.  Salt and pepper to taste.  Bake in oven at 375 degrees for about 15-20 minutes until starting to brown.  Chop up one avocado and half the cherry tomatoes. These will all be used for garnish.

Enjoy!  This is definitely spicy.  Adjust spices as needed for your taste.
