2 c Flour
2 t Baking Soda
1 ½ t Baking Powder
½ t Salt
1 T Cinnamon
1 c Sugar
¼ c Brown Sugar
½ c Applesauce
¼ c Miyoko’s Vegan Butter
2 t Vanilla
1 T Chia Seeds
½ c Milk
2 c Blueberries


Preheat oven to 375 degrees. Line muffin pans with paper liners.  Makes one dozen muffins.

Mix together flour, baking powder, baking soda, salt and cinnamon.   Set aside.  In large bowl, mix sugar, brown sugar, applesauce, butter, vanilla, and chia seeds. Mix until blended.  Add dry flour mix and milk alternately until smooth.  Turn in blueberries. Scoop into lined paper muffin tins. Bake at 375 degrees for 30 minutes.

Sometimes I add a streusel on the top before baking.  The streusel makes these muffins extra tasty.



¼ c Brown Sugar

1 t Cinnamon

2 T Butter

1 T Flour

Combine with fork until crumbly.  Spread on top of muffins.  Bake
