Mexican Lasagna


This dish is perfect to share at a company potluck or even a great meal at home. Your vegan friends will love it. Omnivores won’t believe it isn’t “real” meat and cheese! You will blow everyone’s minds. This dish rocks in taste, presentation, and love.


1 12 oz. Pkg Vegan Crumbles
½ Pkg Soy Chorizo (We love Trader Joe’s Brand)
2 Pkgs Taco Seasoning
1 Onion
1 Can Diced Tomatoes with Green Chilies
1 Pkg Lasagna Noodles
2 15 oz. Cans Black Beans
2 Avocados
1 Pint Cherry Tomatoes
1 Can Diced Green Chilies
1 Head Lettuce
1 Cheesy Sauce Recipe
1 Sour Cream Recipe
1 Cup Water
1 8 Oz Pkg Vegan Shredded Mozzarella Cheese (Trader Joe’s Rocks)
1 8 oz. Pkg Vegan Shredded Cheddar or Pepper Jack Cheese
1 8 oz. Can of Taco Cooking Sauce
½ of a 15 oz. Can of Tomato Sauce
Boil lasagna according to instruction on package. Rinse and set aside. While boiling, make your cheesy sauce and bean mixture.

The link for the cheesy sauce is included in the ingredient list. Add the can of diced tomatoes with green chilies to the cheese sauce.

Meanwhile open and drain two cans of black beans. Put into food processor and add one package of taco seasoning. Whirl until smooth. Set aside.

While lasagna noodles are boiling and beans and cheesy sauce are being made (like you don’t have enough to do LOL), start the “meat mixture”.
Place the crumbles into a frying pan, along with one onion chopped, and the ½ package of soy chorizo. Cook until incorporated and onions are soft, about 10 minutes. Add a package of taco seasoning, one cup of water and cook on low until most of the water is gone and a nice thick meaty sauce is the final result. Turn off the heat and set aside.Diced
Now is the time to assemble this amazing casserole all together.
Combine the taco cooking sauce and tomato sauce. Pour enough of this combined sauce on the bottom of a 9” x 13” baking dish to cover the bottom. Layer three lasagna noodles as the first layer. Next, layer on the meat mixture and sprinkle about ¼ cup of the cheese shreds on top.
Place three more noodles on top of the meat mixture. Spread the black bean mixture on top of the noodles. Sprinkle another ¼ cup of vegan shreds on top of bean mixture.


Place three more noodles on top of bean mixture. Spread cheesy con quest sauce on top.
Place three more noodles on top of con queso sauce. Add about a ¼ to a ½ cup of tomato sauce mixture, the rest of the vegan shredded cheese. Top with salt, cracked black pepper, and some parsley for a mouthwatering taste and presentation. Serve with chopped avocado, diced green chilies, shredded lettuce, sour cream, diced cherry tomatoes, and hot sauce. We used Trader Joe’s Dragon Sauce this go around.
This recipe is very involved, but so worth the effort! No one will be disappointed. This casserole is to die for. Lucky for us, no animals have to die for this recipe.
