SMOKY VEGAN CHICK PEA WRAPS

 

Wow, are these ever tasty! Minimal ingredients including the wraps and the sriracha mayo to dip them in. These healthy sandwiches are full of fiber, nutrients, and a smoky kick!

I have been experiencing with some different vegan recipes since I have all this extra time on my hands.  As usual, I checked to see what I had in my kitchen cupboards and threw in a little of this with a little of that.  They turned out sensational.  We ate them for breakfast, but this easy vegan recipe could be made for any meal.  The added liquid smoke gave them a unique flavor that we really loved.

Once the main mixture was cooked, assembly of the wraps was quick and easy.

 

SMOKY VEGAN CHICK PEA WRAPS

1 Onion

4 Cloves Garlic

1 Zucchini

1 Yellow Squash

1 Cup Water

1 Large Handful of Fresh Spinach

1 Can Garbanzo Beans (Chick Peas)

3 T Liquid Smoke

1 Cup Shredded Lettuce

1 Tomato

Salt and Pepper

¼ Cup Just Mayo

Sriracha Sauce

4 Wraps

 

Set up a frying pan on medium heat. Add the 1 cup of water. Add 1 chopped onion, 4 cloves of minced garlic, 1 chopped zucchini, 1 peeled and chopped yellow squash, and steam until the liquid is just about gone ( about 10 minutes).

While the vegetable mixture is cooking, whip up the two ingredient sriracha mayonnaise. See below!  Shred the lettuce and slice the tomato.   Add the large handful of chopped fresh spinach to the vegetable mixture.

Let the vegetable mixture completely finish steaming for about another minute or two.  Open, drain, and add the one can of garbanzo beans. Add 3 tablespoons of liquid smoke.

Continue cooking on medium heat until the liquid smoke has been incorporated into the vegetable mixture.   Taste test.  Add salt and black pepper if needed.

 

SRIRACHA MAYONNAISE

1/3 Cup Just Mayo

Sriracha Sauce

We love to really spice up our mayo on this dish. Use a little sriracha and once again, taste test.  Make it as spicy as you like. Add more sriracha if needed.  If you don’t like sriracha, serve with Just Mayo.

 

Assembly

Lay out a wrap. You can either spread the dip onto the wrap or serve the dip on the side.  Layer the shredded lettuce and tomato on the wrap.  Put the cooked vegetable mixture on top. Roll up burrito style.

Maybe someday I will be able to wrap properly without all the shit falling out.  I cut them in half and served with the dip on the side. We will definitely be making these again soon.
