SIMPLE  VEGAN CROCK POT VEGETABLE SOUP

Who doesn’t love a big pot of steaming hot vegetable soup on a cold winter’s day?  This recipe turned out so well that between the four of us the entire crock pot full was gone in 12 hours.

The soup is full of beans, lots of veggies, spices, vegetable paste, and water.

This soup is so easy to make. You’ll just do a little prep, throw all the ingredients into the crock pot, and cook!  Crock pot vegetable soup is a perfect combination for anyone no matter what your cooking level is or how much time you have (or don’t)!

 

 

1 Package Frozen Mixed Vegetables

1 Package Dried Red Kidney Beans *Soaked at least 8 hours ahead of time*

1 Onion

1 Green Pepper

1 15 oz. Can Diced Tomatoes

2 Stalks Celery

10 Cloves Garlic

1 t Turmeric

2 t Paprika

2 t Cumin

2 t Black Pepper

2 Dashes Cayenne Pepper

1/3 Cup Better Than Bouillon Vegetable Paste

12 Cups Water

1 Cup Barley

 

Drain and rinse the kidney beans. Put into crock pot. Chop onion, green pepper, celery, and garlic and add to the beans. Add the frozen vegetables, all the spices, vegetable paste, and water.  We used the corn, pea, carrot, and green bean package of frozen vegetables, but I’m sure you could substitute most frozen vegetables for this delicious vegan soup.

You can also use a different brand vegetable paste or even broth, but this is by far our favorite for flavor.

Set Crock pot to low and cook.

Cook for 6 hours.  Add the one cup of barely and cook for another 2 hours.

Eat to your heart’s content.

Simple, healthy, easy….Who wouldn’t love that?  Enjoy! Like most of my recipes, the ingredients can be readily substituted for what you have on hand.  Try different veggies, spices, and even a different flavored broth.  Since I cooked it overnight, Captain UK and I each had a bowl for breakfast.  I proceeded to pack us another bowl for lunch.  That evening, we paired the very last of the soup with vegan grilled cheese and tomato sandwiches.  Vegan cooking should be simple and economical for everyone.
