SIMPLE NAVY BEAN CROCK POT SOUP
1 32 oz. pkg dried navy beans (soaked overnight)
1 12 oz. pkg mixed frozen vegetables
3 stalks celery
2 15 oz. cans diced tomatoes
10 cloves garlic
8 cups water
1/3 cup better than Bouillon Vegetable Paste
1 t crushed red pepper
1 t salt
1 t black pepper
Soak the navy beans overnight or at least eight hours according to package directions. Rinse. Place in crock pot.
Dice the celery, onions, and garlic. Add to the beans. Add the rest of the ingredients. Mix well. Put the lid on the crock pot and forget about it for 8-10 hours.
This soup is delicious, nutritious, and ready to eat when you walk in the door after a long day of work. Dig in.
THE BEST VEGAN CHEESY MEATBALL SUBS
Look, most of us are as busy AF! Homemade is awesome. We get that. But what about the days when we want a tasty meal, but we don’t have a ton of time to cook and we didn’t put dinner in the crock pot that morning?
Here’s a great idea……….vegan cheesy meatball subs!!!
These are delicious.
- Low carb
- High protein
- No cholesterol
- 1 Gram of sugar
How could you not love these?
Their taste is out of this world. We could eat them plain. They are that good.
VEGAN CHEESY MEATBALL SUBS
1 16 oz. pkg zesty vegan meatballs
1 jar marinara sauce
1 8 oz. pkg mushrooms
1 onion chopped
1 cup fresh spinach
6-10 cloves garlic
½ cup water
1 8 oz. pkg vegan mozzarella cheese
¼ cup nutritional yeast
1 T chives
Place frozen vegan meatballs into a glass or metal pan. Pour ½ to entire jar of marinara over the meatballs and bake at 400 degrees for about 20 minutes.
Meanwhile, dice onion, garlic, and mushrooms. Add to a frying pan with the ½ cup of water.
Add the spinach. Salt and pepper a bit for taste. Steam until all veggies are soft.
Remove meatballs from oven and top with nutritional yeast, vegan mozzarella shreds, salt, pepper, and dried chives.
Bake another 10 minutes or until cheese is melted and bubbly.
Serve in sub or hot dog buns and top with mushroom mixture.
We don’t even try to eat them any other way then open faced because they are so cheesy, saucy, and messy!
Serve with a side of canned, fresh, or frozen vegetables and dinner is served.
