This recipe is super simple, fairly healthy, and always goes over well in our family.  Enjoy!

Cook a pound of pasta according to directions on the box.  Doesn’t everyone know how to cook pasta without reading the directions? While the pasta is cooking, make your cabbage mixture. 

1 Head Cabbage Chopped

1-2 Large Onions Chopped

4 Cloves Garlic Minced

¼ to ½ c Olive Oil or Vegan Butter

About 1 c Water

In large pan, add water, cabbage, onions, and garlic. Boil the cabbage mixture until soft and all veggies are cooked through.  Add more water if needed.  Once veggies are done and water is evaporated, toss in the oil or butter for added flavor.  Stir and cook for a few more minutes.  Add salt and pepper to taste. 

Drain and rinse pasta and toss in with the cabbage.  Stir.   Serve!

We served ours with Trader Joe’s soy chorizo and fresh vegetables from our garden.  Very simple weeknight meal!
