GARDEN FRESH BLACK BEAN SALSA

Yesterday, as I’ve been way too patiently waiting for our own garden to ripen up, a coworker brought in bounty of freshly picked tomatoes, onions, and peppers.  After everyone took their lot, I cleaned up and took the rest home. 

I was as excited as a kid in the candy store. 

Once I washed and surveyed all my goodies, I went to work making a dish to “give back” to my awesome coworkers. 

I made a brilliant salsa to share with my family and take a shit load of it back to work. 

Everyone loved it.  So here it is.   You won’t be disappointed.  It tastes like summer.

GARDEN FRESH BLACK BEAN SALSA

3 Onions

5 Peppers

4 c Tomatoes

8 Cloves Garlic

¼ c Olive Oil

1 t Salt

1 t Black Pepper

1 T Lemon Juice

2 T Guacamole Seasoning

1 T Parsley

1 Can Black Beans

Dice up onions, peppers, and tomatoes by food processor (SEPARATELY) or by hand.

Mince garlic.  Place in large bowl.

  Drain and rinse black beans.  Add to the bowl.  Add the rest of the ingredients. Mix well.

This recipe is fantastic right away, but even better if left for a few hours or overnight to marinate and really bring out the flavors.  

 I had a multitude of peppers-some banana hot, banana sweet, and jalapenos.  Use what you like and/or have on hand.

Same thing with the tomatoes.  I had small, medium, cherry, and grape, so I just measured once I had them all cleaned and diced up.

This recipe is easily adjusted and adaptable.  I had concentrated lemon juice on hand. Fresh would have been better.  Fresh lime juice would have been the best. Don’t like black beans? Don’t use them.

Out of guacamole seasoning (or never even heard of it?) use fresh cilantro to your liking.

When I say everyone loved this salsa, I mean EVERYONE!
