VEGAN BANANA BREAD

Who doesn’t love a great banana bread recipe? 

I had some very ripe bananas that I needed to use up last night.  Six to be exact.

I decided to make banana bread for the family.

This banana bread recipe is so easy, you’ll want to make it again and again.

The cool thing is, you most likely have all these ingredients on hand.

Preheat oven to 375 degrees.

VEGAN BANANA BREAD

6 Bananas

¼ c Vegan Butter

½ c White Sugar

½ c Brown Sugar

½ c Plain Vegan Yogurt

1 t Vanilla

1 T Baking Soda

2 ½ c Flour

A little extra butter and flour to prep the cake pans

Peel and place bananas in your mixer. Add butter, sugar, and brown sugar. Beat until submissive (just making sure you are paying attention)!

Once whipped, add the plain yogurt and vanilla.

Beat some more until incorporated.

Slowly add in the flour and baking soda. 

Blend for at least one minute.

Prepare two round cake pans with the extra butter and flour.  Rub the butter on the entire bottom and sides of pan. Discard extra.  Add enough flour to coat and dump any excess flour out.

Pour your banana cake mixture into the prepared pans and spread evenly. 

Bake at 375 degrees for approximately 25 minutes or until browned and cooked through. 

OMG, did this recipe turn out excellent.

Since I had two pans, I took the second one into my coworkers, who devoured it.

We ALWAYS prefer Miyoko’s vegan butter to any other butter. 

We also ALWAYS prefer SO Delicious Brand plain vegan yogurt to any other vegan plain yogurt.

Eat it warm right out of the oven or let it cool.  Me and the kids love putting a piece in the freezer for a few minutes before eating. 

Frost, dust with confectioner’s sugar or just leave it like it is.  This banana cake is absolutely delicious.
