VEGAN CHICK’N SALAD SANDWICHES
We were invited to an end of the year football party for all the parents of 9th grade kids who just finished the season. The adult party was a gesture of thanks for all the volunteer hours the parents had put in helping the football team (concession stands, chain gang, ticket sales, etc.). There was plenty of booze and food as everyone brought some of both to share with the group.
I always use these get togethers to try and showcase delicious vegan food that blows the meat and dairy eaters minds!
I was running some ideas through my head and thought who doesn’t like chicken salad?
I bought some small rolls in the bakery section at my local grocery store to stuff the chick’n salad mixture in for easy to hold packed sandwiches.
This recipe turned out great. Many non-vegans have asked for the recipe and I am thrilled they tried these sandwiches, knowing ahead of time that my chick’n salad not only didn’t contain any chicken, but included some ingredients they weren’t familiar with.
Vegan Chick’n Salad Sandwiches for a Crowd (or just to stuff your face)
2 8oz. Pkgs. Tofurky Plant-based Chick’n
2 oz. Pecan Chips
1 Whole Dill Refrigerated Pickle
1 Stalk of Celery
½ c SO Delicious Plain Unsweetened Yogurt
1 c Just Mayo
1 T Coleman’s English Mustard
1 t Salt and Pepper Seasoning Salt
1 t Black Pepper
Dice the chick’n into bite sized pieces. This versatile chick’n has the ability to shred which makes the texture more chicken like.
Mince the pickles, onions, and celery. Place into a large bowl with the chick’n.
Add the yogurt, mayo mustard, seasoning salt, and black pepper.
Mix well and chill for at least an hour (if not longer) to let the flavors blend together.
Slice the rolls and stuff the chick’n salad into each one.
Your crowd will love them, if you can even get them out of the house before your crew devours them all. Don’t want the bread? Serve in tomatoes or halved avocados. You cannot go wrong with this chick’n salad. I love showing others that people don’t need meat for taste or survival.
We used rolls, but you could also use pita bread, wraps, and even just plain old regular bread.
Sometimes we mix this up by using different nuts, flax seed, or whatever we have on hand.
We layered some lettuce on the bottom of the roles.
I only use SO Delicious brand plain yogurt. It’s not sweet like many other plain non-dairy yogurts and has a very mild flavor. This makes it perfect for additions and combinations with other ingredients to create whatever flavor I need. It does not taste like coconut.
Just Mayo is superior to all other vegan mayonnaises. It tastes like non-vegan mayo without the animal cruelty or the high price.
