DELUXE VEGAN NACHOS
1 12oz Pkg Trader Joe’s Beef-less Ground Beef
2 Pkgs Kroger Taco Seasoning
1 19.6 oz. Pkg Tortilla Land Fresh Uncooked Tortillas
1 8 oz. Pkg Trader Joe’s Vegan Mozzarella Style Shreds
4 oz. Daiya Cheddar Shreds
1 15.25 oz. can Kroger Black Beans
1 15 oz. can Kroger Corn
1 Avocado diced
1 Large onion diced
1 Large tomato diced
½ Head of lettuce shredded
1 Jar Kroger Sweet Hots Jalapenos
1 Jar Trader Joe’s Green Dragon Hot Sauce
Preheat oven to 400 degrees F. Cook the Trader Joe crumbles in a frying pan over medium heat until warm. Add 1 pkg of Kroger taco seasoning and water according to package directions. Turn on low, cooking until incorporated, about 10 minutes, stirring often.
Open Kroger beans and corn. Drain and rinse corn. Set aside. Pour beans (do not rinse) into Ninja or other food processor. Add a ½ package of Kroger taco seasoning. Crush until smooth.
Dice onion, tomato, lettuce, and avocado.
Use a baking dish. Use any size you want. It depends on how thick or spread out you want them.
Start by layering beans and crumbles. Add layers of cheeses, corn, tomatoes, onions, jalapenos and the chips. Do it your way. Bake for about 15-20 minutes until cheese is melted. Keep an eye on it. We layered the chips, but you could certainly leave them out. You decide. As soon as it’s out of the oven, add lettuce, sour cream, diced avocado and hot sauce. Serve immediately! You won’t be able to stop eating this. Enjoy Bitches!
