Layered Mexican Dip

Layered Taco Dip


2 avocados

1 pkg guacamole seasoning mix

1 can refried beans

1 pkg taco seasoning mix

1 cup nondairy plain unsweetened yogurt ( we love SO Delicious)

1/2 C Just Mayo

1 T dried chives

1 t onion powder

1t garlic powder

Salt and pepper to taste

1 large chopped onion

1 pint cherry tomatoes sliced

2-3 large jalapeno peppers diced

1 cup shredded vegan cheese


Use either 8 x 8 inch pan or similar

Cut, scoop, and mash avocados. Add seasoning mix.  Spread in bottom layer.  Mix refried beans and taco seasoning.  You can use any kind of refried beans you want, just double check for lard ingredients. Spread this layer on top of the guac layer. Next whisk the yogurt (we prefer the coconut unsweetened by SO) and the mayo (hands down, we only use Just Mayo) along with the chives, onion powder, and garlic powder. Spread on top of the bean layer. Cut the onions, tomatoes, and jalapenos. Put on top. Add the cheese (we prefer Chao). Let sit in fridge for at least an hour-the longer the better. Serve with tortilla chips.  You’ll want to eat the fuck out of it, I promise. Enjoy!  When I have plenty of time, I make the guacamole homemade with peppers, onions, and tomatoes, cilantro, garlic salt, and lime juice.  Stay tuned to that recipe going up on the site.
