Healthy Breakfast Potatoes

3 Large Potatoes

1 Large Onion

1/2 Green Pepper

1 Cup Water

Salt and Pepper to Taste

Slice, dice or however you like your potatoes.  We sliced.  Dice up one onion and the green pepper.  Pour water into large frying pan.  Add vegetables, salt, and pepper.  Steam with lid on for about 10 minutes on medium heat.  Flip over all veggies.  Recover.  Steam for about 6-8 more minutes until soft.  These easy potatoes are a cross between boiled and fried potatoes.  NO ADDED OIL.  Less fat and very healthy. We loved these.  If you must have them super crisp, add a few tablespoons of oil to fry them up.   We thought they were very tasty with no oil.   Enjoy!finished

I served these awesome potatoes with Field Roast Sausages, ripe avocados, whole wheat toast with Marmite,  fresh tomatoes, and some Scotch Bonnet Sauce for kick for Captain UK. Added some grapefruit juice and hot coffee and damn, it’s one hell of a meal.
