SIMPLE CROCK POT VEGETABLE SOUP
1 Package Frozen Mixed Vegetables
1 Package Dried Red Kidney Beans *Soaked at least 8 hours ahead of time*
1 Green Pepper
1 15 oz. Can Diced Tomatoes
2 Stalks Celery
10 Cloves Garlic
1 t Turmeric
2 t Paprika
2 t Cumin
2 t Black Pepper
2 Dashes Cayenne Pepper
1/3 Cup Better Than Bouillon Vegetable Paste
12 Cups Water
1 Cup Barley
Drain and rinse the kidney beans. Put into crockpot. Chop onion, green pepper, celery, and garlic and add to the beans. Add the frozen vegetables, all the spices, vegetable paste and water. We used the corn, pea, carrot, and green bean package of frozen vegetables, but I’m sure you could substitute most frozen vegetables for this delicious vegan soup. You can also use a different brand vegetable paste or even broth, but this is by far our favorite for flavor.
Set crock pot to low and cook.
Cook for 6 hours. Add the one cup of barely and cook for another 2 hours.
Eat to your heart’s content.
